Stacey Antine, MS, RD is the founder and CEO of HealthBarn USA, Inc., the leader in proven hands-on healthy-lifestyle education for children and their families. HealthBarn USA opened its first location at ABMA’s Farm & Market of Wyckoff, New Jersey in April 2005; and now offers its school programs at Hilltop Hanover Farm and Environmental Center, Westchester, NY and its wildly popular “Try it, you’ll like it” school assembly nationwide. She is a registered dietitian with a Master’s of Science in Food, Nutrition and Dietetics from New York University. Stacey has over 20 years of experience as a nutrition counselor, speaker, writer and media spokesperson — including 18 years in public relations.During her dietetic training at Beth Israel Medical Center, New York City she became familiarized with the types of traditional programs available for overweight and at-risk youth. She was one of 10 women entrepreneurs to win the Make Mine a Million $ Business Competition, sponsored by AMEX Open, Count Me In and other major corporations for HealthBarn USA. Stacey is a member of the American Dietetic Association (ADA), has a certification in childhood and adolescent weight management ADA and is appointed to the ADA’s RD Communications Council for its national Kids Eat Right campaign. Stacey is also appointed to the advisory board of the master’s degree program in nutrition communication at Tufts University’s Friedman School of Nutrition Science and Policy. She is an adjunct teacher at Speyer Legacy School in New York City where she developed and teaches its optimal health curricula for students. She wrote the foreword for Great Expectations: Best Food for Your Baby & Toddlers and the nutrition commentary for celebrity chef and HealthBarn USA advisory board member Curtis Aikens’ book, Cooking is a Family Affair. In addition, Stacey is an alumnus of Bergen LEADS class of 2010, a leadership program for people who want to make Bergen County a better place to live and work. |
Molly Fallon, RD is a Registered Dietitian who came to HealthBarn USA during her dietetic internship at the University of Medicine and Dentistry of New Jersey, and never left! Her nutrition career is definitely off to a unique start at the barn where she spends most of her day on the balance ball enrolling kids in our year-round programs, scheduling field trips and assemblies and making everyone feel welcome. Molly is the general manager and definitely your go-to person for all questions, so don’t hesitate to ask!She received her B.S. in Dietetics with a concentration in Weight Management from the University of Delaware in 2009. Her experiences both during her internship and in an inner city hospital truly shaped her passions in the field of nutrition. She found the large volume of hospital admissions for diet and lifestyle related diseases due to a lack of education frustrating. This is when Molly realized the importance of prevention and the need for education in our healthcare system, especially for young children. |
Kay Truckenmiller is the ultimate master gardener and spends her time looking after the Seedlings and the HealthBarn USA team. Cooking is a family affair at the Trunkenmiller home, she is always whipping up healthy recipes for us to try at lunch-time, since there is no such thing as “take out” at the barn! You can also spot Kay at school assemblies all over New Jersey either at the whole grain tasting station or busy making the Rainbow Swirley for eager students who can’t get enough of the fresh, all-natural food! Kay has been with the HealthBarn USA team since Fall 2005 and comes to us with high marks from Joel Flagler, Rutgers University. |
Margaret Dunn-Carver, MS has a Master’s Degree in Nutrition and Food Science from the University of Vermont (UVM). For her graduate studies, she focused on early childhood obesity prevention research. As part of her undergraduate and graduate work at UVM, she worked behind the scenes for a behavioral weight loss research team. In addition to her educational pursuits, she seeks out a variety of experiences with the common thread of health and nutrition. Margaret interned as a nutrition educator and cooking instructor at a youth summer farm program, taught healthy cooking classes to adults with developmental disabilities, volunteered for the Hunger Free Vermont non-profit program, and acted as a volunteer coordinator for her local community garden in Winooski, Vermont. In addition, she is a certified yoga teacher and has been teaching yoga for over 6 years to children and adults. She is thrilled to continue to follow her passion for cooking, farming, and health at HealthBarn USA. |
Joel Flagler, MS is a full professor with Rutgers University and serves as the agricultural agent for Bergen County, NJ. He has been a registered horticultural therapist since 1984 and has investigated people/plant relationships for over 25 years. Joel is the editor of two books and author of many professional journal articles. He has received numerous national and regional awards for his work in agriculture and horticulture and has garnered several million dollars in grants and funding for his horticultural therapy programs. Joel received his bachelor of science from Rutgers University Cook College and his master’s degrees from Yale University. |
