What the surprise? Root Veggies

Do you love chocolate truffles but you don’t want the added saturated fat and calories that come along with them? Then, this recipe is for you. These truffles taste delicious, are simple to make and contain a secret nutritious ingredient (potatoes!). Potatoes contain phytochemicals that protect the immune system. These tasty bites also pack extra heart healthy potassium. Make them with the whole family to have on hand for a healthy treat.

1 pound, medium potatoes (yields 1.5 cups mashed)
2 tablespoons non-fat, Greek yogurt
1 tablespoons low-fat milk
3/4 cup semi- sweet chocolate chips
1 teaspoon vanilla extract
1 tablespoon maple syrup

1. Peel, wash and boil potatoes until fork tender (about 25 minutes).
2. In a medium bowl, mash potatoes with hand masher or fork.
3. Add yogurt and milk and stir until smooth, set aside.
4. In a double broiler, melt chocolate chips and add to potato mixture.
5. Add vanilla extract and maple syrup and stir until all ingredients are blended.
6. Cover and cool in refrigerator for at least one hour (the longer the better!).
7. Set up a baking sheet with parchment paper and measure 2 teaspoons of mixture and roll into ball, then place on sheet. Continue until all of the mixture is used.
8. (Optional) Roll truffles in cocoa powder, shredded coconut or finely chopped walnuts.

Makes 36 servings (1 per serving).
