HealthBarn USA is excited to announce our first ever weekly healthy recipe contest!  There are many interpretations of a healthy recipe, that aren’t so healthy at all.  So, we decided to raise the bar and make learning about nutrition fun.  Each Monday we will be unveiling a different seasonal ingredient here on our blog, and we are looking to all of you to share your favorite healthy recipe featuring the ingredient of the week.  At the end of the week we will review all the submissions and announce a winner the following Monday. So, what makes a winning recipe? Taste is first and foremost. It must be delicious! Next, it needs to meet our criteria for a healthy dish: a good source of fiber, low in saturated fat, and low in sodium. Make sure your recipe fits these guidelines.  And lastly, we are looking for creativity. What makes your dish unique?  Can it be prepared as an activity involving children (bonus points for kid-friendliness!).  Creative recipe names are encouraged.  Each week’s winner will receive a HealthBarn USA recipe magnet. Now, let’s get cooking!

HealthBarn USA campers’ homemade eggplant towers

To kick off our weekly contest, your first challenge is to send in a uniquely delicious recipe for…EGGPLANT!  Here at the Barn, our campers are harvesting their hand-grown eggplant in our garden.   A couple of weeks ago, we learned all about why it’s so nuritious. Packed with vitamin C, magnesium, and fiber, its seeds are inside the flesh, meaning that this so-called veggie is actually a fruit!  The campers loved seeing all the beautiful colors of the eggplant: deep purple, lilac, and white, and we reached great heights with our homemade eggplant Parmesan towers.  Eggplant gets super sweet and creamy when it’s cooked, so it’s an easy favorite among summer’s seasonal ingredients.

Now we want to know what you like to cook with eggplant!  Share your favorite recipe with us by Thursday, August 23 and we will announce the winner on Monday, August 27, along with the following week’s ingredient.  All submissions should be sent to [email protected].   Please include your name, hometown, and a picture of your dish, if possible.
