Overnight Oat Parfait – is the breakfast of champions! If you are tired of eating breakfast and then, find yourself starving by 10:00 am, you going to love this recipe! This heart healthy meal is loaded with healthy fats, an excellent source of protein and dietary fiber, and gives you a major boost of vitamin C, iron and calcium! It’s easy to make and perfect for your on-the-go mornings!
Ingredients:
1/2 cup Greek Yogurt, nonfat, vanilla
1/3 cup rice milk, enriched (or soy or cow’s milks)
1/3 old-fashioned oats
2 teaspoons sun butter, unsalted (or peanut or almond butters)
1 tablespoon flax seeds, ground
1/2 banana, sliced
Directions:
1. In a mason jar, place all of the ingredients EXCEPT the sliced bananas, into a mason jar (or other glass container) and mix well.
2. Close the container and place in the refrigerator overnight.
3. In the morning, top you parfait with banana slices!
