Tasty bell peppers steamed to perfection.

We are crazy for this delicious, easy to make Stromboli recipe that kids (and adults, too!) are raving about.  It’s a super simple dinner and a great way to get good nutrition to boost the immune system.  If there are leftovers, pack it for a school lunch or snack.  We hope this becomes a weekly recipe staple in your home.

Dough Ingredients:
1 cup warm water
1 teaspoon active dry yeast
1 teaspoon honey
1 ¼ cups whole wheat flour
1 cup unbleached all-purpose flour + extra for dusting
¼ teaspoon sea salt
1 teaspoon extra virgin olive oil

Stromboli Ingredients:
1½ cups marinara sauce, low sodium
4 multi-colored sweet bell peppers, thinly sliced
1 cup mozzarella, low fat, grated
1 teaspoon extra virgin olive oil

Directions:

  1. Making the dough: In small bowl, combine warm water, yeast and honey. Stir to dissolve.  Let sit for 3-5 minutes to make sure that yeast mixture foams and starts to bubble.In a large bowl, combine flours and sea salt. Gradually add the yeast mixture to the dry mixture and combine with your hands to form a dough ball.  Once formed, drizzle one teaspoon of olive oil to coat the ball evenly.  Then, place a dry cloth towel over the top and let sit in a warm place for one hour or until it has doubled in size.
  2. Knead down the dough and allow the dough to proof for an additional one hour.
  3. Making the Stromboli: Preheat oven to 450°F. Line a baking tray with parchment paper and set aside.
  4. Divide dough into three equal parts. Lightly flour a surface and roll out one round into a thin rectangle.
  5. Spread ½ cup of marinara sauce over dough to outer edges. Then, evenly distribute 1/3 peppers and 1/3 cup of mozzarella cheese over the surface.
  6. At the bottom of the rectangle, start to slowly fold dough and roll it several times until reaching the top of the dough. Place the Stromboli on the baking tray steam side down.  Repeat the process with the two remaining balls.
  7. Brush each Stromboli surface lightly with remaining one teaspoon of olive oil. Place in the oven for 20 minutes or until the Stromboli is golden brown.
  8. Let rest for 10-15 minutes to cool. Slice 5-6 slices per Stromboli to serve.  Enjoy!
