Delicious Plant-Based Proteins!

Yeehaw! Everyone loves chips and salsa, but this Texas Caviar takes it to a whole new level. Packed with protein from two different kinds of beans, vitamin C from the bell peppers, and tons of flavor from the fresh herbs and vinegar, you’ll want to serve this at your next party or on game day. This nutritious snack will be the real winner!

Ingredients:

1 15 ounce can black eyed peas, drained
1 15 ounce can black beans, drained
1 cup corn, fresh or frozen
½ red onion, minced
1 green bell pepper, finely diced
1 red bell pepper, finely diced
1 jalapeno, seeded and minced (optional)
1 garlic clove, minced
½ cup minced cilantro
2 scallions, sliced thin
1 Tablespoon olive oil
¼ cup red wine vinegar or apple cider vinegar
¼ teaspoon sea salt
Juice of 1 lime

Directions:

  1. Add all ingredients to a bowl and toss to combine. Cover and refrigerated for at least one hour, up to 24 hours. Serve with tortilla chips, on top of burgers or sandwiches, or crostini.

Makes approximately ­­­28 servings (1/4 cup per serving).
