The Seedlings (ages 3-5) had a lot to celebrate on Saturday, November 19 with their families at the barn.  Our youngest farmers accomplished great things in the organic garden by harvesting veggies and putting it to rest for the winter; and had fun making HealthBarn USA naturally nutritious recipes.  Most importantly, they tried a variety of seasonal fruits and vegetables, including grapes, apples, radishes, broccoli, pumpkin seeds and sweet potatoes.

With Thanksgiving a few days away, they decided to be Native American Indians from the Lenape Tribe (first settled in the tri-state area).  They made super cool headdresses with feathers and cooked up our delicious Sweet Potato Pancakes. The pancakes definitely got the thumbs up from everyone!

These sweet potato pancakes are a super nutritious breakfast loaded with whole grains, protein, healthy fats and vitamin A — whoa!  Parents will be flipping them for Thanksgiving breakfast, and freezing the leftovers (if there are any) for the upcoming week!  Pop leftovers in the toaster and they are delish.  Serve with agave nectar or 100% maple syrup.  Let us know if we get the thumbs up!
